White Bean Salad with Parsley & Lemon Juice

Ingredients
  

  • 2 cans of white beans drained and rinsed well
  • 4 celery stalks finely chopped
  • 1 cup cabbage finely chopped
  • 0.5 red onion chopped
  • 1 cup snow pea sliced on the diagonal or coarsely chopped
  • 1 cup finely chopped kale, spinach or arugula
  • 0.5 cup chopped parsley
  • 3 tablespoons dulse flakes a sea vegetable
  • 1 dash cayenne pepper
  • 0.25 cup olive oil
  • 0.25 cup white balsamic vinegar
  • 1 lemon juiced
  • salt and pepper to taste

Instructions
 

  • Prepare the beans and vegetables, and combine in a large bowl. Add dulse flakes and cayenne pepper. Add remaining ingredients and toss well.  (Recipe #895)
