White Bean Salad with Parsley & Lemon Juice

Ingredients
- 2 cans of white beans drained and rinsed well
- 4 celery stalks finely chopped
- 1 cup cabbage finely chopped
- 0.5 red onion chopped
- 1 cup snow pea sliced on the diagonal or coarsely chopped
- 1 cup finely chopped kale, spinach or arugula
- 0.5 cup chopped parsley
- 3 tablespoons dulse flakes a sea vegetable
- 1 dash cayenne pepper
- 0.25 cup olive oil
- 0.25 cup white balsamic vinegar
- 1 lemon juiced
- salt and pepper to taste
Instructions
- Prepare the beans and vegetables, and combine in a large bowl. Add dulse flakes and cayenne pepper. Add remaining ingredients and toss well. (Recipe #895)
