Wild Rice Salad with Balsamic Dressing

Ingredients
- 1 package wild rice cooked according to directions
- 0.25 cup chopped red onion
- 1 fresh herbs chives, parsley, garlic chives or cilantro
- 0.5 cup walnuts chopped
- 1 yellow pepper chopped
- 4 tablespoons olive oil
- 1 tablespoon balsamic vinegar sweetens, add more to taste
- 1 dash salt
Instructions
- Cook rice and let cool. Combine with onion, herbs, walnuts and yellow pepper. Blend the oil, vinegar, and salt, and toss with the salad. (Recipe #899)
