Wild Rice Salad with Balsamic Dressing

Ingredients
  

  • 1 package wild rice cooked according to directions
  • 0.25 cup chopped red onion
  • 1 fresh herbs chives, parsley, garlic chives or cilantro
  • 0.5 cup walnuts chopped
  • 1 yellow pepper chopped
  • 4 tablespoons olive oil
  • 1 tablespoon balsamic vinegar sweetens, add more to taste
  • 1 dash salt

Instructions
 

  • Cook rice and let cool. Combine with onion, herbs, walnuts and yellow pepper. Blend the oil, vinegar, and salt, and toss with the salad.  (Recipe #899)
