Zucchini, Cabbage & Broccoli Stem Slaw

Ingredients
  

  • 4 zucchinis shredded
  • 1 head of cabbage shredded
  • 2 heads of broccoli stems shredded, save florets for another use
  • 0.25 cup light vinegar such as coconut, white balsamic or cider vinegar
  • 0.75 cup extra virgin olive oil
  • 5 drops stevia
  • 1 lemon juiced
  • 2 tablespoons water
  • 4 cloves garlic
  • 1 fresh herbs like parsley or chives
  • salt to taste

Instructions
 

  • Prepare vegetables and combine in a large bowl. Process remaining ingredients in a food processor or blender until smooth. Taste and adjust seasoning. Toss with slaw and serve.  (Recipe #914)
