Zucchini, Cabbage & Broccoli Stem Slaw

Ingredients
- 4 zucchinis shredded
- 1 head of cabbage shredded
- 2 heads of broccoli stems shredded, save florets for another use
- 0.25 cup light vinegar such as coconut, white balsamic or cider vinegar
- 0.75 cup extra virgin olive oil
- 5 drops stevia
- 1 lemon juiced
- 2 tablespoons water
- 4 cloves garlic
- 1 fresh herbs like parsley or chives
- salt to taste
Instructions
- Prepare vegetables and combine in a large bowl. Process remaining ingredients in a food processor or blender until smooth. Taste and adjust seasoning. Toss with slaw and serve. (Recipe #914)
