Zucchini Muffins

Servings 8 muffins

Ingredients
  

  • 1.25 cups almond flour
  • 0.25 cup Valrhona cocoa powder
  • 0.25 teaspoon salt
  • 0.5 teaspoon baking soda
  • 2 eggs
  • 2 tablespoons coconut oil
  • 0.25 cup honey
  • 1 tablespoon vanilla extract
  • 3 drops stevia
  • 0.75 cup grated zucchini

Instructions
 

  • In a food processor, mix together all ingredients except for the zucchini. Once you have a smooth mixture, fold in the zucchini. Pour into a muffin pan and bake at 350 degrees for 15-17 minutes, or until a toothpick comes out clean.  (Recipe #912)
