Zucchini Muffins

Ingredients
- 1.25 cups almond flour
- 0.25 cup Valrhona cocoa powder
- 0.25 teaspoon salt
- 0.5 teaspoon baking soda
- 2 eggs
- 2 tablespoons coconut oil
- 0.25 cup honey
- 1 tablespoon vanilla extract
- 3 drops stevia
- 0.75 cup grated zucchini
Instructions
- In a food processor, mix together all ingredients except for the zucchini. Once you have a smooth mixture, fold in the zucchini. Pour into a muffin pan and bake at 350 degrees for 15-17 minutes, or until a toothpick comes out clean. (Recipe #912)
