In a large skillet, heat oil and when hot, add bay leaf, cumin seeds, and saute until golden. Add onion, ginger, and cook for 3-4 minutes. Add tomatoes, potatoes and cauliflower, cooking until soft, but making sure the potatoes do not fall apart into small pieces. Add salt to taste and top with chopped cilantro.
