Coconut Cream & Corn Chowder

Coconut cream is not the same as coconut milk. You can find coconut cream at specialty grocers like Trader Joe's.

Ingredients
  

  • 1 large white onion thinly sliced
  • 1 clove garlic chopped
  • coconut oil enough to coat bottom of pot
  • 1 small can coconut cream
  • 3 ears of corn cleaned, kernels cut off
  • 0.75 cup chicken or vegetable broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 teaspoon ground ginger
  • 0.5 teaspoon red curry paste

Instructions
 

  • Saute onion and garlic in the coconut oil until very soft but not brown. Add remaining ingredients and let cook for about 15 minutes. You can puree half the soup if desired.   (Recipeā™¦306)
