La Kama Spice Mix

This is Morocco's most common seasoning used to flavor soups, stews, and tagines. It is also used as a rub on poultry and lamb.

Ingredients
  

  • 1 tablespoon ground ginger
  • 1 tablespoon black pepper freshly ground
  • 2 teaspoons ground turmeric
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg

Instructions
 

  • Combine all spices. It will keep stored in an airtight container for about a month. Makes about ¼ cup.  (Recipe♦520)
