Wash and peel the sweet potatoes or yams. Cut into cubes and place in a roasting pan. Drizzle with olive oil, salt and dried oregano, and toss together. Roast at 350 degrees until soft, flipping once or twice, about 30-40 minutes. Remove from oven and allow to cool. Combine with onion, parsley, and lemon juice and serve at room temperature.
