Vegetable Mock Tuna Salad

Ingredients
  

  • 1 serving of Aioli Mayo see link below for recipe
  • 3 cups shredded carrots from about 1 lb
  • 1 cup finely chopped celery
  • 0.25 cup chopped yellow onion

Instructions
 

  • Shred carrots in food processor. Place the Aioli Mayo, shredded carrots, chopped celery, and chopped onion in mixing bowl. Mix well. Place in romaine lettuce leaves as sandwiches.  (Recipe #878)
