Veggie Wraps in Rice Paper

Servings 8 servings

Ingredients
  

  • 4 carrots grated
  • 1 sprouts we used pea shoots
  • 1 red pepper cut in thin strips
  • 1 package Vietnamese rice paper or use collard or lettuce leaves

Instructions
 

  • Sun-dried Tomato Dressing is used with this recipe. Mix half the dressing with the shredded vegetables by massaging them together. Follow the package directions on the rice paper and quickly assemble them one by one and place immediately on the dinner plate (the less sticky handling the better). Add a dollop of the dressing on top of each wrap.  (Recipe #883)
